Sorry meat-eaters, but as much as we'd like to think that all we need to do is give a plate extra taters and veggies, that doesn't make a great, enticing, and balanced meal for your vegetarian guest. However, it's not too hard or time intensive to stay in theme and make your vegetarian guests happy. And please -- leave the tofurkey in the store. It's just not a gobbling goodie, so try themed dishes like these instead:
- -- Make a pumpkin-covered pasta dish, or go the extra mile and make actual pumpkin pasta.
- -- Soups, which can be made ahead of time and reheated, are perfect for vegetarian guests (as long as you remember to use veggie stock!). Try Beet Soup in Roasted Acorn Squash, or one of the other great Thanksgiving-themed soups from Epicurious.
- -- For something more reflective of a turkey and stuffing, try Butternut Squash with Wild Rice and Onion Stuffing.
- -- Finally, fungal lovers might like Portobello Pumpkin Pizzas.
