We gorge on turkey like gluttonous fiends one day, and then groan as we face a refrigerator stuffed with leftovers the next. So what do we do with all of those slices of turkey, dishes of cranberry sauce, extra potatoes, macaroni and cheese, and other leftovers? It's easy:TV dinners. When I was a kid, store-bought TV dinners came on sturdy plates (I still have some!) and compartment trays, so my family would save up a bunch and make frozen turkey dinners before putting away all of the leftovers. Each dish got some turkey, stuffing, potatoes, and gravy just like a mini dinner. Then the meals were labeled, covered in foil, and frozen for awesome mini-Thanksgivings in the future. While it might be hard to save up the dishes these days, there are products out there like this Tupperware container that are perfect for the job.
Stock. While it won't help you use up the stuffing, for example, stock will make extra use out of your turkey. Get the stock from the carcass and make soup with the help of leftover veggies like celery and onion, plus those little bits of leftover turkey.
Turkey Pot Pies. After you spend a few days trying to use up your leftovers, most of them can easily be thrown into a pot pie. One tasty and easy recipe is Gourmet's Turkey Pot Pie with Cheddar Biscuit Crust.
Once you hit these mainstays, and a turkey sandwich or two, you should have easily made use of all your Thanksgiving leftovers. And I say this as a person who always buys a 20-pounder for two people.
